Happy Valentine’s Cake

How to make a perfect red glaze for your favourite Valentine’s cake.

This year at Euroquip we have decided to treat our staff with a chocolate gelato cake, on a biscuit base, fully decorated by a red glossy glaze.

Obviously, we have all the needed kitchen equipment at our disposal. Starting with a crunchy heart-shaped biscuit base, baked in our serie S by Moretti Forni, a creamy chocolate gelato has been prepared with our benchtop multifunction machine RT51 by Staff Ice System; to keep the cake together and reach the perfect consistency, we leave it to set in our Vision blast chiller by Coldline. Besides its bacteriological feature, blast chilling helps to maintain the organoleptic characteristics. The quick chilling incredibly reduces the loss of water contained in the food. Therefore, products lose less weight and oxidize less, flavours and textures are better preserved. A blast chiller is indispensable in the pastry industry because it allows solidifying icings, mousses, creams and jellies. For this gelato cake we have preset our blast chiller at -40C, to avoid the cake from melting when pouring the warm red glaze on it.

Red Glossy Glaze Recipe:

  • 20 g Gelatin powder (220 bloom)
  • 120g Water (for the gelatin)
  • 280g Liquid glucose
  • 150g Water
  • 300g Sugar
  • 200g Sweetened condensed milk
  • 300g White Chocolate
  • Red food colouring

Add your gelatine and water to a bowl and stir to combine. Set to one side. Boil the sugar, water and glucose until it hits 103C. Once it has, take it off the heat and whisk in the gelatin.

Once combined, add the condensed milk and whisk again.Pour this mixture over a heatproof bowl which has your white chocolate in it (chopped up nice and small) and stir until everything is melted and incorporated. Add this mixture to a jug along with your food colouring. Blend for about 1-2m very gently, not moving the stick blender otherwise this will create air bubbles. Leave to cool, stirring occasionally to prevent a skin and pour over your cake at 28-30C.
