Chef Iside Maria Di Cesare, twice mother and doubly talented, is the frontwoman at “La Parolina located in Trevinano which is a small hamlet in the Council of Aquapendente, the last village you can find at the north border of Lazio region. She tells her chef-life story and her experience with the multifunction blast chiller VISION made in Italy by Coldline.

“My restaurant’s name is La Parolina (“a Little Word”) and is located in Trevinano which is a small hamlet in the Council of Aquapendente, the last village you can find at the north border of Lazio region. Here we live enjoying the landscape, nature, raw materials and still simple human relationships, as there are very few inhabitants.
I was thrilled by the idea of being able to get the first produce available and by the chance to personally visit my fellow producers. When we opened the restaurant, my idea was to re-propose what was the Sunday family feast, when people used to gather in the countryside.

I hope that those who come to my restaurant would be able to breathe this atmosphere with relatives and friends while enjoying a table in such a genuine context. When working in a city you are supplied with excellent raw materials, but it’s like telling a story starting from the second half. Instead, we can see the products growing and have to opportunity to go for a walk and collect spontaneous fresh herbs… I think this is something incredible.

I always try to create my dishes with both tradition and innovation, because tradition speaks about us and innovation about our ideas. Technology is key. It has improved my working method not just in the speed of execution, but also in the precision. The use of blast chiller in the kitchen is fundamental; when working in a restaurant is very important to be creative but at the same time we need to standardize a product so that is replicable and, above all, is always the same for the final consumer. I use VISION as a classic blast chiller because of its high standards and in particular its versatility. It also allows an easier staff management because we are now able to estimate more precise times on the working phases and consequently it’s possible to establish a job chain so everything works better.

It also allows us to buy the best product at a lower price when the offer is bigger when the land gives the best quality in the largest quantity”
