Don Antonio Starita (photo on the left) is a legend of the “Pizza Napoletana”. His family opened a pizzeria in Naples (where the pizza was invented in the 1700) over than 100 years ago.

Has been a pleasure for us having him cooking at our kitchen. The 20th of March his Masterclass was fully booked with over than seventy attendees.

Don Antonio Starita and his staff (Diego Viola as well as known as Doctor Pizza & Raffaele Vitale) showed to their public how to make the perfect dough for Neapolitan Pizza (watch the video below):

Besides his “Marinara Pizza” (video above) which is obviously not a seafood pizza, Don Antonio has proudly showed how to make his famous “Pizza Montanara”: characteristic of this pizza is its fried dough, finished in a Valoriani wood fired oven.

Last but not least, the gluten free pizza. The process to make this kind of dough (suitable for celiacs) it it’s quite similar to the recipe you have seen in the video. The ingredients are a bit different:

  • 1 Kg of Le 5 Stagioni Gluten Free flour
  • 0.800 cl of water
  • 2 grams of yeast
  • 50 cl of extra virgin olive oil
  • 10 grams of salt
