Enrico Sgarbossa was born in Bassano del Grappa (VI) and he has more than 13 years in the pizza industry. He has began as a help pizza maker and his mentor Valerio taught him, and made him ready to be a pizza teacher.
He worked since 2014 for an Italian flour mill, as a technician, and he had access to,meet and learn from the best pizza chefs, pastry chefs and bakers among the hospitality business.
On 2016 he opened “Al taglio, the art of pizza”, the first gourmet pizzeria in Australia/Asia, a new combination between the baking art and the food, to provide a light and innovative healthy pizza. He loved the way Agugiaro and Figna open with a new pattern of mill the grain “Macinazione integrata”, which combines two kind of milling and It’s the best way to maintain each single wheat grain qualities.
