Craft Chocolate Class – Bean to Bar

We invite you to be a part of an Exclusive 3-day Craft Chocolate Class, presented by Jessica Pedemont of Chocolate Artisan, direclty from Italy – FBM Representitive Giuseppe Di Chiano and Brian Atkin of Makira Gold.

This is a 1st of a kind class ever offered in Australia, this is a hands on professional class, whether you are in industry already or looking to set up a professional chocolate making establishment of some sort using commercial equipment.

In this process we will feature various brands with the focus on FBM Italian made quality equipment, including winnower, melange and automatic tempering machine. This will celebrate the launch of FBM now
available in the country with its national distributor Euroquip to be held at the head office showroom in Sydney.

We will cover ALOT of content in this class, including:
> Sourcing beans (farmers, creditability, import, local, international etc)
> Correct storage of beans (short term, long term, guidelines)
> Roasting, Winnowing/cracking, grinding, ageing, tempering (tabling/auto tempering), storing, shaping etc
> Trouble shooting, production set up, questions

This is an invite only event and is a 1st come 1st served based booking opportunity as we have 50+ invites with maximum 20 spaces. Please contact us ASAP with your RSVP deposit to secure your place!

This invitation entitles 1 space in the class granted it is not fully booked prior. If you’d like to book more than one spot we will do our best to accomodate. We plan to offer this class next year, if you are uable make the dates scheduled, we can place you on a waiting list or note your interest for next year.

Uniform: Chef jacket is optional if you’d like, aprons will be provided for you, comfortable closed in shoes and hair tied back if needed.
